Carriage or wagon

Once the olive paste had been distributed in the baskets, they were placed on a vertical string through the needle or vertical bar in the centre of the wagon. This central axle held up the olive mats, which were placed one by one. The number of mats was determined by the height of the “needle”, only the tip was left uncovered, so that it would fit into the thickness of the head of the press, which was perforated to allow the needle to pass through once the pressure of the pump began to be applied.

When the wagon was full of baskets and had the correct fill level, it was pushed to move it along the rails to the press. Once inside the press, it was levelled until the wagon’s axle was in the centre of the press head. The wagon was lifted upwards by the force of the cylinders, and a piston was used to press the oil out of the oil hoods. Its force was regulated by means of a clock that had four strokes according to the force with which the press had to be operated, two strokes to go up and two strokes to go down. The “piston” came out of the floor when the cylinders were set in motion to help press the load of the wagon with the bonnets, until it released all the oil and the liquid residue that filtered through its holes into the tanks.
