The mill acted as a mixer, leaving the olive paste, also known as “pichin,” on the floor, which was manually deposited in baskets made of esparto grass, which were then stacked in a pile and sent to the hydraulic press, which was watered with hot water, increasing the pressing yield, or the amount of oil obtained for the amount of olives ground. The higher the press’s height, the more difficult it would be to keep the load of straight olive piles on top of the wagon, because the same mass would force them to slip, necessitating the holes in the centre to allow them to pass through the wagon’s needle.
