The story goes that one day, an Italian merchant called Vita appeared in our town, who was dedicated to travel through the villages, selling cans to store food, something new at that time, because the local people did not know that element as a system of conservation.
Then he observed that the people of our town used dehydrated (sun-dried) tomatoes and peppers as a preservation technique.
It was then when it occurred to him, in order to increase his sales of cans, to teach them a technique of preservation of tomatoes and peppers that he had seen in the area of Naples, where the neighbors could thus conserve the surplus of tomatoes and peppers for a longer period of time.
This technique had great acceptance in our town since this family settled here for several generations, because small family industries were emerging in the early twentieth century, until today.

Thanks to these entrepreneurs we can proudly say that Suflí is the town of the Fritá.
